If you're like me, you want your healthy diet to also be flavorful and something the whole family can enjoy. The last thing you want to do when you're already busy with work, school and extra-curricular activities is to have to make multiple meals.

Well, look no further than a crowd-pleaser slow cooker soup that is served with Beanfields bean and rice chips. Everyone loves a meal with chips, right? How much do you love chips with 5 grams of protein and 6 grams of fiber...thank you very much!

The best part about slow cooker soup recipes is that you can toss everything in before bed; have it cook overnight; and wake up to a hot lunch that you can pack to go!

Or you can toss in all the ingredients in the morning; leave for work; and return home to a hot dinner...then run out the door to your next event of the day.

I'm a big fan of hot lunches, so my personal pick would be to cook over night and pack my lunch in a microwave-safe, leak-proof container.

Warning: when cooking overnight, the awesome smell of your soup may wake you, and make you salivate - I speak from experience!

Tortilla Soup Recipe

2 boneless, skinless chicken breasts

2 cups chicken broth

1/2 jar of salsa

1/3 cup cream cheese

1/2 cup shredded pepper jack cheese

1 can corn (drained)

1 can black beans (drained)

Cook on low for 8 hours. Shred chicken with two forks and mix thoroughly.

Vegetarian Tortilla Soup Recipe

2 cups vegetable broth

1/2 jar of salsa

1/3 cup cream cheese

1/2 cup shredded pepper jack cheese

1 can corn (drained)

1 can black beans (drained)

1/4 cup Mung beans

2 Tb. chopped jalapeno peppers

Cook on low for 8 hours.

Note: Beanfield's chips are vegan. Yay!

    Both the vegetarian and chicken versions of this soup sound absoultely fabulous! Thank you for sharing the recipes and the great ideas of cooking them overnight for a hot lunch or during the day for a quick ready to go dinner. And I cannot wait to try Beanfield chips—you certainly cannot beat 5 grams or protein and 6 grams of fiber in a tasty, munchy chip!
